Tortilla Crusted Tilapia with roasted garlic salsa
Crab cake with roasted jalapeno's
& butter coated angel hair pasta topped with Parmesan.
Your talking about a great meal with great flavors. Don't let the jalapeno's scare you one bit. Buy the ones that are pickled in the can. They should be already seeded. Set your oven on 400. While that is preheating, get your pot of water on the stove and set it to high. By the time the oven is preheated, you should be 3/4 of the way to the water boiling. Take a cookie sheet and brush it with some extra virgin olive oil. You should be able to get the Tilapia already coated in the tortilla from Kroger's, Meijer's, Marsh, Whole Foods etc. You can find the crab cakes pre made in your seafood section. Now granted they are nothing like the crab cakes that Cheryl has access to, but, out here in the heartland, we make do with what we can get!:D Take your Tilapia and crab cakes, I use 1 Tilapia fillet to 2 crab cakes. Sounds like a lot but I'll explain. Take your jalapeno's and put 3 to 4 on each crab cake. Spoon out some of the juice from the can and pour it on top of each crab cake. Then take your roasted garlic salsa and ladle 3 good globs of salsa right on top of the Tilapia. By now, your oven should be preheated. Shove those babies into the oven and set the timer to 15 mins.
Now take some extra virgin olive oil into your water and when it comes to a boil, drop your temp down to halfway. Drop your pasta and stir occasionally to make sure it doesn't stick to the bottom of the pot. 4 mins on the pasta. That's it. Pull your pasta after 4 mins, strain with cold water and then return to the pot. Drop a big ole glob of butter in and mix the pasta up until the butter is melted. Your fish and crab cakes should be ready. Pull those puppies out, cut the Tilapia in half and plate 1 crab cake to 1/2 of the Tilapia. Plate your pasta, dust with Parmesan cheese and BOO YAH BABY! Enjoy!
